Today we paid a visit to one of our suppliers Tomek Grela. It was quiet and calm, and the air was fresh as his farm is located just next to Kozłówka Landscape Park. The farm offers highest quality produce. I just love such places! We’ve been searching for the mushrooms which we will later introduce into our menu. We started with the portobello – the ones cultivated at the mushroom farm of Tomasz Grela are the only ones in Poland to hold an ecologic certificate. We will pickle them. Other mushrooms tempt us with the plenitude of shapes. We can choose from shiitake, nameko, bearded tooth mushroom, oyster mushroom, and eryngi. We will definitely dry the bearded tooth mushroom to retrieve its intense aroma. As for the other mushrooms we are currently working on them in the kitchen.
